Last night’s dinner. Made with all ingredients we have available through Everything Organic Produce, minus a few spices. 💃🏼🕺🏼

Black Beans with Wild Rice and Mango Salsa and Very Simple Guac. (Mashed up avocados 😂)
ALL ORGANIC, of course. 😉
Red bell pepper
Onion, red, yellow or white
Start with dry black beans. You can soak overnight, or if you’re more like me and don’t always have your meals planned ahead, you can do a quick soak.
Bring beans that are covered with about 2 inches of water to a boil. Boil 2 min. Turn off and let soak 1 hour. Drain and refill pot with water covered about 2-3 inches above the beans, and simmer for a couple hours, add more water if necessary to keep the beans covered and stir every once in awhile.
I added coriander, cumin and bay leaf to my beans while they were simmering. This is not necessary, but it tastes good. Maybe a couple tablespoons of each and about 6 bay leaves and I started with about 3 cups of dry beans.
1 part rice to 2 parts water cover with lid.
Bring to a boil.
Turn to low and cook 40 minutes.
Peel and chop mangoes and put in a bowl. However many you want or need for your meal. I think I used 6 atualfo mangoes for this size bowl.
Add as much or as little as you like of the following:
Onion, red is best, but I used yellow for this and the whole bowl got eaten by 4 people, so yellow works too. 🤷♀️
Cilantro. I used one whole bunch.
Red pepper. I used one for this size bowl.
Jalapeño pepper. I used one. If you like spicier, add more.
Lime juice. I used one lime for this.
Mix it up and enjoy!! This is a family favorite!
Scoop out avocado and mash!
The salsa and beans already have so much flavor, regular guacamole would have been too much flavor, but how could we not have some sort of guac? 😍
